TILAPIA & STEAMED BOK CHOY RECIPE:
INGREDIENTS:
For tilapia:
2 filets of tilapia (or any white fish)
To marinate:
2 tablespoon soy sauce
1 tablespoon rice wine vinegar
1 tablespoon black bean sauce
1 teaspoon minced ginger
1 teaspoon minced garlic
For bok choy:
3-4 bok choys (quartered & washed thoroughly)
Optional seasoning:
1 tablespoon cooking oil
1 tablespoon chopped shallots
1 teaspoon minced garlic
1 teaspoon brown sugar
1 teaspoon water
1 teaspoon toasted sesame seeds
1 teaspoon chopped spring onions
INSTRUCTIONS:
- Mix the ingredients listed under “To marinate” section. Coat both sides of the 2 tilapia (or any white) fish fillets with this mixture
- Cut the bok choys into quarters and wash thoroughly to remove any dirt and transfer to an ekovana pan.
- Place the marinated fish fillets in the other ekovana pan.
- Stack the pans with fish on the bottom and bok choy on top.
- Close the pans and lock the easy lift handles.
- Add 1 cup water to the pressure cooker insert and lower the stacked pans.
- Close the pressure cooker lid with vent in sealing position and cook on manual/ high for 4 mins.
- Allow NPR (Natural Pressure Release).
- Once pressure fully released, open the pressure cooker and remove pans.
- Bok choy and tilapia are perfectly cooked.
- Optionally garnish the bok choy by following instructions below.
- In a bowl mix 1 teaspoon brown sugar, 1 teaspoon water, 1 tablespoon soy sauce.
- Heat oil in a skillet and fry minced garlic, chopped shallots until brown.
- Add the soy sauce, brown sugar mixture and mix for few seconds.
- Pour this seasoning over steamed bok choy.
- Garnish the fish with toasted sesame seeds and chopped spring onions.
- Enjoy flavorful black bean tilapia with steamed bok choy !
